Easy Banana Bread
Description
This banana bread begins by mashing ripe bananas, which provide natural sweetness and moisture. The batter incorporates both granulated and brown sugar for balanced sweetness and depth, softened unsalted butter, egg, and vanilla extract. Leavening is provided by baking soda and baking powder for even rise. Ground cinnamon adds warmth and aroma.
Sour cream enriches the bread by adding moisture and a mild tang, contributing to a tender crumb texture. The batter is mixed just until combined to avoid toughness, then baked in a greased loaf pan until a toothpick comes out clean.
The bread is best enjoyed after cooling completely to set its structure, making slicing easier and preventing crumbling. It can be stored at room temperature for a few days or frozen for longer preservation. Optional add-ins like nuts or chocolate chips can introduce texture and flavor variations to personalize the bread.
Ingredients
- 3 banana ripe, mashed
- ½ cup granulated sugar
- ½ cup brown sugar
- ⅓ cup butter unsalted, softened
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon ground
- ¼ cup sour cream
- ⅛ teaspoon salt
Instructions
- Preheat the oven to 350℉. Generously grease a loaf pan or spray it with cooking spray. I used a 12x4.5 inch loaf pan, but a regular size loaf pan will work as well.
- In a large mixing bowl, mash the bananas with either a fork or a potato masher.
- Add the rest of the ingredients together and mix with a whisk. Use a spatula to scrape down the sides if needed.
- Transfer the pan to the preheated oven and bake for 45 minutes to one hour, or until you insert a toothpick in the center and it comes out clean.
- Cool for a few minutes in the pan, then let it come to room temperature on a cooling rack. Cut into slices and serve.
Notes
- Use very ripe bananas for sweeter, moister bread with better flavor.
- Mix ingredients just until combined to avoid a dense or tough texture.
- Consider adding nuts, chocolate chips, or dried fruit for additional texture and flavor.
- Allow the bread to cool completely before slicing to maintain structure and avoid crumbling.
- Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
