Easy Banana Pancakes for Two

Easy Banana Pancakes for Two use ripe banana mashed into a batter with flour, sugar, baking powder, and a touch of vanilla. With a fluffy texture and natural sweetness, they cook on a griddle until golden with characteristic bubbles on top for easy flipping. This small-batch recipe yields tender pancakes suitable for a cozy breakfast or brunch.

Description

Easy Banana Pancakes for Two combine mashed ripe banana with standard pancake ingredients to make a moist, tender breakfast dish. The batter includes all-purpose flour, sugar, baking powder, salt, egg, and a bit of milk and vanilla, resulting in pancakes that are fluffy with natural banana sweetness throughout. The rise from baking powder helps create a light texture, while the banana adds moisture and flavor.

Cooking is done on a medium-heat griddle or skillet, greased lightly, and pancakes cook until bubbles appear on top and edges set, then flipped to finish cooking. The portion size serves two, ideal for a small household breakfast without leftovers.

This simple recipe can be adjusted for thickness by adding a little more milk, and the pancakes pair well with syrup or fruit toppings. Nutritional information per pancake excludes any toppings added.

Ingredients

Servings
  • ½ cup all-purpose flour 60 g
  • 1 ½ teaspoons granulated sugar 6 g
  • 1 teaspoon baking powder
  • teaspoon salt
  • 1 banana medium-to-large, very ripe
  • 1 egg large
  • 2-3 tablespoons milk any percentage, divided
  • 1 tablespoon vegetable oil or melted butter
  • ½ teaspoon vanilla

Instructions

  1. In a small bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a medium bowl, use a fork or potato masher to mash peeled banana very well. Add egg, 2 tablespoons of the milk, oil, and vanilla, and mix until well-combined.
  3. Add flour mixture and use a spoon to stir until just combined. If batter seems too thick, add up to 1 tablespoon more milk.
  4. Heat a griddle to 350°F or a skillet over medium heat (no higher). Once cooking surface is hot, lightly grease with butter or cooking spray and add pancake batter using a 1/3 cup. Cook first side until the tops of the pancakes begin to bubble. Flip and cook until cooked through.
  5. Serve and enjoy!

Notes

  • Use a ripe banana well mashed to incorporate natural sweetness and moisture evenly.
  • Do not overmix the batter; stir until just combined for tender pancakes.
  • Adjust milk amount slightly if batter is too thick for smooth pouring but avoid thinning too much.
  • Serve immediately for best texture; pancakes can be reheated gently if needed.
