Easy Barbacoa Recipe

This Easy Barbacoa Recipe slow cooks a chuck roast in a fragrant broth of beef stock, apple cider vinegar, garlic, and smoky chipotle chilis with adobo sauce and spices. The result is tender, flavorful shredded beef infused with complex, smoky, mildly spicy taste. Served with traditional toppings like red onion, cilantro, and lime, it suits tacos, bowls, or sandwiches.

Description

The recipe calls for a sizable chuck roast cooked slowly in a mixture of beef broth, apple cider vinegar, finely chopped garlic, chipotle chilis in adobo, ground cumin, chili powder, oregano, and kosher salt. The low-and-slow cooking for about eight hours in a slow cooker breaks down the meat, resulting in shred-ready tender beef that absorbs the smoky, tangy, and spicy flavors from the broth.

After cooking, the beef is shredded directly in the cooker with forks ensuring it stays moist with the remaining sauce. The final dish offers a rich, savory profile with a smoky heat balanced by acidity from vinegar and aromatics.

Barbacoa works well for versatile meals such as tacos topped with fresh red onion, cilantro, and lime wedges for brightness and contrast. It's an economical preparation yielding flavorful meat usable across various dishes.

The dish stores well in airtight containers, keeping fresh refrigerated for up to a week or frozen for several months, enabling make-ahead convenience.
