Easy BBQ Chicken Sandwiches

Easy BBQ Chicken Sandwiches feature seasoned boneless skinless chicken thighs pan-cooked until browned and cooked through, then brushed with BBQ sauce and served on buns topped with a creamy ranch coleslaw made from pre-shredded cabbage and carrots mixed with sliced green onion and ranch dressing. The combination delivers a savory, smoky, and tangy sandwich with a crisp, creamy slaw adding texture contrast.

Description

This recipe seasons chicken thighs with smoked paprika, garlic powder, salt, and pepper before pan-frying in neutral cooking oil over medium heat to achieve a well-browned exterior and thorough cooking. The chicken is then coated with BBQ sauce to add smoky sweetness.

A quick ranch coleslaw is made by mixing a bagged pre-shredded coleslaw mix of cabbage and carrots with sliced green onions and ranch dressing, lending a creamy, slightly tangy accompaniment to the sandwich. The sandwiches are assembled by layering one chicken thigh with a generous scoop of ranch slaw on each bun, creating a balance of smoky meat and fresh, creamy slaw textures.

This straightforward approach yields four sandwiches and makes good use of simple ingredients combined to create classic BBQ sandwich flavors. Serving immediately preserves the crunchiness of the slaw and the juiciness of the chicken.

Ingredients

Servings
  • 1 tsp smoked paprika $0.10
  • 1/2 tsp garlic powder $0.05
  • 1/4 tsp salt $0.02
  • 1/4 tsp black pepper $0.02
  • 1 lb. chicken thighs $2.99, boneless, skinless
  • 1 Tbsp neutral cooking oil $0.04, generic cooking oil
  • 1/4 cup BBQ sauce $0.11
  • 7 oz. coleslaw mix $0.65
  • 2 green onion $0.20, sliced
  • 1/4 cup ranch dressing $0.37
  • 4 Buns $2.49

Instructions

  1. Combine the smoked paprika, garlic, powder, salt, and pepper in a small bowl. Cut any large chicken thighs in half to make them more sandwich-sized (you'll want four pieces total). Season both sides of the chicken thighs with the prepared spice mix.
  2. Heat the cooking oil in a large skillet over medium heat. Once hot, swirl to coat the surface of the skillet. Add the seasoned chicken and cook for 5-7 minutes on each side, or until the chicken thighs are well browned and cooked through.
  3. Remove the chicken from the heat and brush BBQ sauce over both sides of each piece.
  4. Add the coleslaw mix, sliced green onions, and ranch dressing to a bowl. Stir until everything is combined and evenly coated in dressing.
  5. To build the sandwiches, place one piece of BBQ chicken on each bun and top with a heaping scoop of the ranch slaw. Serve immediately.

Notes

  • The coleslaw mix used is a pre-shredded bag containing cabbage and carrots; this recipe uses half of a 14-ounce bag.
