Easy Bean Dip
Description
Easy Bean Dip combines canned refried beans with cream cheese and sour cream for a smooth, creamy texture. The taco seasoning brings a warm, mild spice, balanced by diced jalapenos and canned mild green chiles that add subtle heat and flavor complexity. The dip is folded with shredded cheddar cheese, which melts during baking, creating a rich, gooey surface. Baking the mixture until hot and bubbly allows flavors to meld and the cheese to form a golden top. Finally, fresh green onions add a crisp, fresh note as a garnish. This dip works well chilled or warm, perfect for serving with tortilla chips at casual gatherings or as a tasty snack.
Ingredients
- 16 ounces refried beans canned
- 4 ounces cream cheese softened
- ½ cup sour cream
- 1 tablespoon taco seasoning half a packet
- ¼ cup jalapeno pepper optional but recommended, diced
- 4 ounces green chiles drained, canned, mild
- 2 green onions divided
- 3 cups cheddar cheese divided, shredded
Instructions
- Preheat the oven to 375°F.
- Thinly slice the green onions and separate the white and green portions. Set the green part aside.
- In a medium bowl, combine the cream cheese, refried beans, sour cream, and taco seasoning with a hand mixer until fluffy.
- Fold in the whites of the onions, jalapenos, chiles, and 2 cups of cheddar cheese. Spread into a 2qt (or 8x8) baking dish.
- Top with remaining cheese and bake 20-25 minutes or hot and cheese is melted.
- Sprinkle remaining green onions on top as garnish. Serve with tortilla chips.
