Ingredients

Servings
  • gredients and Substitutions

Sauce:

  • 3 tablespoon soy sauce
  • 2 tablespoon oyster sauce
  • 1 tablespoon mirin
  • 1/2 teaspoon white sugar

Scrambled eggs:

  • 1 tablespoon butter
  • 3 egg lightly whisked

Fried rice:

  • 2 tablespoon olive oil
  • 1/2 onion finely diced
  • 3 garlic finely minced, cloves
  • 500 g beef 1 lb
  • 1.5 cups carrot peas, corn (still frozen or use fresh, frozen diced
  • 3 cups white rice 1 cup uncooked rice = 3 cups cooked rice ( see note, day-old, cooked
  • 1/2 cup green onion 1-2 stems, finely sliced

Instructions

  1. Melt 1 tbsp butter in a large skillet over medium heat. Add the whisked eggs, stirring constantly to create soft, fluffy eggs. Once set, remove from the skillet and set aside.
  2. Add 1 tbsp olive oil to the skillet, toss in the diced onion, and let it sizzle for 2 minutes. Add the minced garlic and cook for another 2 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and the liquid evaporates. Mix the sauce ingredients and pour 2 tbsp of sauce over the beef. Cook for 2 minutes.
  4. Stir in the mixed vegetables and allow the beef to caramelize a bit for those golden-brown edges.
  5. Add the day-old rice and pour the rest of the sauce over it. Mix well. Press the rice down slightly, letting it sit to form crispy bits. Stir and repeat this process to get those crispy edges—don’t let it burn!
  6. Gently fold the scrambled eggs back into the skillet and sprinkle with green onions. Serve hot and enjoy!

Notes

  • Why Use Day-Old Rice
  • If you don’t have leftover rice, don’t even try to make this recipe with freshly cooked rice. You will be disappointed. However, if you’re determined to make it, I’ve had luck cooking fresh rice, then spreading it on a baking sheet and placing it in the freezer for a couple of hours to let it dry out. This method can work well to achieve that crumbly texture essential for great fried rice.
