Easy Beef Vegetable Soup

Ingredients

  • 1 - 1 ¼ pound steak or beef fillet, sliced
  • 1 cup butter or 2 sticks
  • 1 cup all-purpose flour
  • 1 can (28 oz) tomatoes canned, diced
  • 3 talks celery chopped
  • 1 large carrot chopped
  • 1 onion chopped
  • 2 cups mushrooms sliced
  • 2 tablespoons Worcestershire sauce
  • 1 cup heavy cream more or less according to taste, or whipping cream, 35%
  • 10 cups beef broth
  • 1 teaspoon salt more or less to taste
  • 1 teaspoon black pepper more or less to taste
  • gravy browning if desired, to darken
  • parsley fresh, for serving if desired

Instructions

  1. Get out all of your ingredients.
  2. Chop your onion.
  3. Slice your mushrooms.
  4. In a large pot, over medium high heat, melt butter.
  5. Brown your sliced beef for 3 or 4 minutes.
  6. Reduce heat to medium, add flour and stir until smooth.
  7. Add the onion, mushrooms, carrot and celery.
  8. Cook for about 10 minutes.
  9. Add undrained canned tomatoes, broth and Worcestershire sauce.
  10. Add salt, pepper and gravy browning if you prefer a darker colored broth for your soup. Simmer for between 1 and 1 ½ hours.
  11. Taste your soup to make sure it has enough salt and pepper. Add cream 5 minutes before you are finished cooking.
  12. Sprinkle chopped fresh parsley on top.
  13. Serve and enjoy!

Slow Cooker Beef Vegetable Soup

  1. This can be made in the slow cooker but you’ll still want to start out by browning your steak or beef, adding flour, then sautéing the carrots, onions, celery and mushrooms. You’ll pour both of those mixtures into a large slow cooker along with everything else.Cook on low until beef and potatoes are tender, about 6 – 7 hours, then add any frozen vegetables you want to add and heat through.
