Easy Beetroot Burger
Description
The recipe starts by sautéing diced onion and garlic in rapeseed oil until translucent and fragrant. These are combined in a blender or food processor with drained butter beans, oats, and chopped cooked beetroot and pulsed to a coarse mixture. The formed patties rest in the fridge to firm before baking at 200°C for about 20-25 minutes, turning once to ensure even cooking and slight crispness on both sides. The baking method avoids frying, producing a less oily burger but still well-cooked throughout.
These beetroot burgers are ideal for serving in rolls or buns with fresh lettuce, tomato, and other desired burger toppings. They offer a convenient homemade vegetarian option with wholesome ingredients and a balance of texture and flavor from the beans and beetroot.

Ingredients
- 1 tablespoon rapeseed oil (or any cooking oil) plus extra for greasing
- 1 onion diced
- 1 clove garlic minced
- 5 tablespoon oats
- 1 can butter beans {400ml/15oz can} (lima beans), drained and rinsed

Instructions
- Heat the oil in a frying pan and add the onion. Cook for a few minutes until translucent, then add the garlic and cook for a further minute.
- Add the onion mixture to a food processor or blender, along with the oats, beans and beetroot and pulse until it forms a
- Form the mixture into small burger shapes and place on a plate. Cover and refrigerate for 30 mins.
- Heat oven to 200C/400F and grease a baking tray with oil.
- Add the burgers and bake for 20-25 minutes, turning halfway through.
- Serve in mini rolls with salad, hummus and desired toppings.
