  • 1 tablespoon olive oil
  • 2 cups mixed vegetables cubed, I used onions, carrots, and celery
  • 6 cups chicken broth plus more if needed
  • 2 pieces bay leaf
  • salt to taste
  • black pepper to taste

Bisquick Dumplings

  • 2 cups Bisquick Mix
  • 2/3 cup milk

Chicken

  • 2 cups chicken use store-bought rotisserie chicken to save time, or you can boil whole chicken from scratch, shredded, cooked

Instructions

Make the Soup

  1. Add oil to a large dutch oven or pot over medium-high heat.
  2. Add onions, carrots, and celery. Sauté for about 5 minutes or until vegetables begin to soften.
  3. Add chicken broth and bay leaves. Bring to a boil, and season with salt and pepper to taste.
  4. Let the soup gently boil for about 5 minutes or until vegetables are tender. While the broth is simmering, prepare Bisquick dumplings below.

Make Bisquick Dumplings

  1. In a large mixing bowl, mix the bisquick mix and milk until just combined. (Don't overmix your dough)

Cook Bisquick Chicken and Dumplings

  1. When the vegetables are tender. Remove them from the soup.
  2. Reduce the heat, and spoon out a piece of Bisquick dumpling dough using a cookie dough spoon and drop it into the soup. Repeat this process until you used up all the Bisquick dough.
  3. Simmer uncovered for 10 minutes, and cover with a lid and cook for another 5-10 minutes or until the dumplings are cooked through.
  4. Add shredded chicken and vegetables into the broth, and season with more salt and pepper if needed. Cook for about 3 minutes or until heated through.

Notes

  • Slow cooker option: cook vegetables, broth, and bay leaves on high for 3 hours before adding dumplings and chicken 30 minutes prior to serving.
  • To thicken the broth, stir in a mixture of 1 tablespoon cornstarch and 1 tablespoon water while boiling.
  • Remove cooked vegetables before dropping dumpling dough into the soup to prevent the dumplings from breaking apart.
  • Do not stir the dumplings after adding; let them simmer uncovered then covered on low heat for best texture.
