This blackberry cobbler is made with a sweet blackberry-lemon filling and topped with sugary buttermilk biscuits. Add ice cream and you've got perfection!

Ingredients
Blackberry Filling
- 4 cups blackberries
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 3 tbsp corn starch
- 1 tbsp lemon juice
Cobbler Topping
- 1 1/2 cups all purpose flour cold
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter very cold
- 1 cup buttermilk very cold
- 1 tbsp vanilla extract
- 3 tbsp granulated sugar for the topping

Instructions
Blackberry Filling
- In a medium bowl, mix all the filling ingredients.
Cobbler Topping
- Combine all the dry ingredients together in a separate large bowl. Whisk mixture to combine.
- Cut in or grate butter into the dry ingredients. Combine together until you achieve course crumbles.
- Combine buttermilk with vanilla extract. Add it to the flour mixture. Stir to combine until lumpy.
- Place blackberry filling on the bottom of a 9 inch baking pan.
- Top off cobbler with about 6 to 8 spoonfuls of the topping and sprinkle with the 3 tbsp of sugar.
- Bake at 375°F for about 40 minutes or until golden brown. Serve with your favorite ice cream.
