An incredibly easy to make skillet dessert with fresh summer blackberries!

Ingredients
Blackberries
- 3 cups blackberries 15 oz
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon 3 g
- 2 teaspoons sugar 10 g
- 1/4 teaspoon ground ginger
Batter
- 1 1/4 cup all purpose flour 175 g
- 1 1/4 teaspoon baking powder 6 g
- 1/3 cup sugar 65 g
- 1/2 teaspoon fine ground salt 3 g
- 1 teaspoon cinnamon 3 g
- 2/3 cup milk 2% or whole
- unsalted butter to grease skillet
- vanilla ice cream

Instructions
- Preheat Oven: Preheat the oven to 350 degrees F. Use unsalted butter to generously grease a cast iron skillet or baking dish and set aside.
- Prep Berries: Add berries to a medium-sized bowl and add lemon juice, 2 teaspoons of sugar, vanilla extract, cinnamon, and ground ginger. Mix.
- Prep Batter: Add flour, baking powder, salt, sugar, and cinnamon to a bowl. Whisk well. Add milk and mix until just combined.
- Assemble: Add all but 1/4 cup of the blackberries to the greased cast iron. Spread in an even layer. Dollop the thick batter to the top of the berries and gently spread while being careful to not mix batter and berries. Top the batter with the remaining 1/4 cup of blackberries.
- Bake: Add to oven and bake for 35 minutes.
- Serve and enjoy with vanilla ice cream!

- Flour: You can easily make this gluten-free with a 1:1 gluten-free flour!
- Milk: Whole milk will also work well.

- We use a 12" cast iron for this recipe, but you can also use a 10" skillet too for a thicker berry layer. If you don't have a cast iron skillet, a 9X13 glass baking dish will work well too.
