  • 20 ounces Rotel Original (2 cans)
  • 1 bunch cilantro stems removed
  • ½ yellow onion peeled and cut into quarters
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin ground
  • 1 tablespoon honey
  • ½ jalapeño (see note)

Instructions

  1. Add the cans of Rotel to a blender along with the cilantro, onion, garlic, salt, pepper, cumin, and honey.
  2. Cover and blend until liquid.
  3. Pour into a dip bowl for serving or transfer to an airtight container and store in the fridge until you're ready to serve.

  • Blend the salsa first without jalapeño to gauge heat, then add the jalapeño without seeds for desired spice level.
