Description
This salsa uses canned Rotel tomatoes with green chiles as a base for a bright and mildly spicy foundation. Fresh cilantro, quartered yellow onion, and garlic add herbal and pungent notes. Ground cumin, salt, and black pepper contribute earthiness and seasoning, while honey balances acidity and heat with sweetness.
Blending the ingredients creates a smooth consistency suitable for dipping or topping dishes. Jalapeño pepper is added optionally to increase heat; removing seeds reduces spiciness. This flexibility allows tailoring the salsa’s spice level to taste.
The salsa can be refrigerated in an airtight container and served fresh as a complement to chips, tacos, eggs, or grilled meats.

Ingredients
- 20 ounces Rotel Original (2 cans)
- 1 bunch cilantro stems removed
- ½ yellow onion peeled and cut into quarters
- 1 clove garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin ground
- 1 tablespoon honey
- ½ jalapeño (see note)
Instructions
- Add the cans of Rotel to a blender along with the cilantro, onion, garlic, salt, pepper, cumin, and honey.
- Cover and blend until liquid.
- Pour into a dip bowl for serving or transfer to an airtight container and store in the fridge until you're ready to serve.
Notes
- Blend the salsa first without jalapeño to gauge heat, then add the jalapeño without seeds for desired spice level.
- For a spicier salsa, add ½ to 1 whole jalapeño with seeds or a pinch of cayenne pepper.
