Description
This recipe starts by trimming excess fat from a chuck roast and cutting it into large pieces. The beef pieces are browned on all sides in olive oil for flavor development. Onions and mushrooms are then sautéed in the same pan until lightly browned, utilizing the beef drippings to deepen their taste.
The beef is returned to the pan, seasoned with salt, cumin, and black pepper, and combined with bay leaves and beef broth. Covered and baked in the oven at 375°F for about 90 minutes, the long cooking time tenderizes the beef, making it easy to shred or cut through while concentrating the flavors in the rich broth and mushrooms.
The dish is classic comfort food suitable for cold weather or slow-cooked meals. It pairs well with mashed potatoes, rice, or crusty bread to soak up the sauce. Serving immediately preserves the optimal tenderness and warmth.
Ingredients
- 3 lbs beef chuck roast
- 4 tbsp olive oil
- 2 onion large
- 1 lb mushrooms
- 1 tbsp black pepper ground
- 1 tbsp salt adjust to taste
- 1 tsp cumin ground
- 3 bay leaf
- 2 cups beef broth
Instructions
- Trim the Beef of any excess fat and cut the beef into 3-inch pieces. Set it aside.
- Chop the onions into one inch chunks and the mushrooms into halves. Set the veggies aside.
- Preheat a Dutch oven (or another oven-safe dish) with 2 tablespoons of oil over medium-high heat. Add in the Beef and brown each piece on all sides. Remove the Beef from the pot and set it aside.
- In the same pan, add 2 more tablespoons of oil and cook the onions and mushrooms in the Beef drippings until they turn a light shade of brown.
- Add the Beef back into the pan and season the pot with salt, cumin, and black pepper. Add in bay leaves and beef broth. Cover with a lid.
- Bake in a preheated oven to 375°F for about 90 minutes or until Beef is tender. Serve immediately with your favorite side dish and enjoy!
