Easy breakfast yogurt and fruit cups

Easy breakfast yogurt and fruit cups feature homemade fruit compotes layered with Greek yogurt. The compotes use fresh or frozen fruits like pineapple, mango, strawberries, and blueberries cooked down with a sweetener and citrus juices to create a naturally sweet topping. These cups offer a creamy and tangy breakfast or snack option with bright fruit flavors and a smooth texture.

Description

This recipe involves simmering fruit with a sweetener and lemon or lime juice to break down the fruit into a thick compote. Pineapple and mango are combined for a tropical compote, while strawberries and blueberries each make their own. Vanilla is added to the strawberry compote for extra flavor. After cooking, the compotes are cooled and layered with Greek yogurt in jars or containers, creating a colorful and nutritious meal component.

The yogurt provides creaminess and protein, balancing the natural sweetness and slight tartness of the fruit compotes. The texture varies from smooth and thick compote layers to the rich, dense yogurt. These cups can be prepared in advance and kept refrigerated, making them practical for busy mornings or easy snacks throughout the week.

The combination of tangy Greek yogurt and sweetened fruit compote allows flexibility in sweetness level and fruit choice. The recipe uses straightforward stovetop simmering to transform fresh or frozen fruit into a luscious topping.

  • 1 cup pineapple chopped
  • 1 cup Mango chopped
  • 2 tbsp sweetener of your choice
  • 2 tsp lime juice

For the strawberry compote

  • 2 cups strawberries quartered
  • 1 tbsp sweetener of your choice
  • 1 tsp lemon juice

For the blueberry compote

  • 2 cups blueberries I used frozen
  • 1 tbsp sweetener of your choice

Instructions

  1. To make the compote, simply place the fruit, sweetener and lemon/lime juice (and vanilla if you're making the strawberry compote) in a saucepan and bring to a simmer. Simmer for 10-15 minutes or until the fruit has broken down and the compote has thickened slightly. Keep in mind that it will continue to thicken as it cools.
  2. Remove the compote from the heat and allow to cool.
  3. Layer with the Greek yogurt in sealable jars/containers and place in the fridge for up to 5 days.
