- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 onion diced
- 1 teaspoon garlic minced
- 1/2 pound chicken cooked or turkey, diced; 225g
- 1/2 pound pork cooked pulled, 225g
- 1 1/2 cups lima beans or butter beans, frozen, 270g
- 1 cup sweet corn kernels fresh or frozen, 225g
- 1 2/3 cups chicken broth 380 ml
- 14 oz diced tomatoes canned, 400g
- 2/3 cup ketchup or tomato sauce, 160 ml
- 1/2 cup barbecue sauce 125 ml
- 1 tablespoon hot sauce optional, brand: Franks
- salt
- black pepper
Instructions
- Heat oil and sauté onion in a dutch oven until soft.
- Add in garlic and stir for 30 seconds.
- Dump in the chicken or turkey, shredded pork, butterbeans/lima beans, sweet corn kernels, broth, diced tomatoes, ketchup, BBQ sauce, hot sauce (if using), salt, and pepper.
- Bring to a boil and then simmer for 35 - 40 minutes, slightly uncovered.
- Adjust seasonings as needed and serve.
Notes
- You can prepare this stew with frozen meat by thawing it overnight in the refrigerator first.
- Use leftover cooked lima beans or pre-cooked frozen beans for convenience.
- Adding cooked potatoes will help thicken the stew if a firmer texture is preferred.
