This dish is assembled by portioning the salsa-infused rice into bowls followed by topping with the prepared vegetables and fresh cilantro leaves. The chipotle cream sauce is added last, lending moisture and flavor contrast. Its combination of ingredients makes it suitable for a filling lunch or dinner with balanced protein, fiber, and fat.
For variations, chipotle paste can be substituted with chipotle peppers in adobo sauce for a different heat profile. The bowl is best served fresh to maintain the crispness of the vegetables and the creaminess of the sauce.
Ingredients
- 1 cup rice uncooked
- 1 cup salsa homemade or store-bought
- 3 cups romaine lettuce chopped
- 1 corn whole kernel, drained, 15.25-ounce can
- 1 black beans drained and rinsed, 15-ounce can
- 2 Roma tomato diced
- 1 avocado halved, seeded, peeled and diced
- 2 tablespoons cilantro fresh, chopped leaves
For the chipotle cream sauce
- 1 cup sour cream
- 1 tablespoon chipotle paste
- 1 clove garlic pressed
- lime juice of 1
- ¼ teaspoon salt or more, to taste
Instructions
- To make the chipotle cream sauce, whisk together sour cream, chipotle paste, garlic, lime juice and salt; set aside.
- In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
- To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, corn, black beans, tomatoes, avocado and cilantro.
- Serve immediately, drizzled with chipotle cream sauce.
Notes
- Chipotle peppers in adobo sauce can replace chipotle paste for the chipotle cream sauce at a 1:1 ratio.
