Easy Butterscotch Coffee Cake
Description
The Easy Butterscotch Coffee Cake uses a yellow cake mix combined with instant butterscotch and vanilla pudding powders, eggs, water, and oil to produce a moist, tender cake with added depth from the puddings. A streusel topping made by mixing brown sugar, cinnamon, and chopped pecans is layered between and on top of the batter, contributing a crisp, textured contrast and a nutty, sweet flavor. The cake is baked at 325ºF for 40-45 minutes until set and a toothpick inserted comes out clean.
The presence of two pudding mixes in the batter enhances moistness and flavor. Brown sugar and cinnamon in the streusel complement the butterscotch notes, while pecans add crunch. This coffee cake is well suited for casual gatherings or as a treat alongside coffee or tea.
The cake can be finished with a powdered sugar glaze consisting of powdered sugar, heavy cream or milk, and vanilla extract, drizzled after cooling for extra sweetness. Cutting into about 15 servings is typical, though nutritional values will vary based on ingredient brands.
The cake can be made using basic kitchen equipment including a mixer and 9x13" pan.Ensure mixing of cake batter is thorough for even texture.Bake until a toothpick comes out clean to confirm doneness.Optional glaze adds a smooth, sweet finish to the cake.
