- lemon juice from 1 large
- 2 garlic finely minced, small cloves

- ½ cup Parmigiano-Reggiano cheese or Parmesan cheese, freshly shaved or grated
- ¼ teaspoon kosher salt , to taste
- ¼ teaspoon black pepper to taste, ground
For the Cesar Salad:
- 1 romaine lettuce cleaned and cut into 1 to 2-inch pieces, large head
- ⅓ to ½ cup Parmesan Cheese freshly shaved or shredded plus extra for garnish
- 2 cups croutons , to taste
Instructions
- For the dressing: In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt, and pepper, and whisk until well combined. Taste and adjust to your liking.
