Easy Canapés
Description
Easy Canapés begin with slices of baguette, either fresh or toasted, spread with whole milk ricotta cheese to provide a mild and creamy base. Each canapé is topped with a distinct combination of ingredients: smoked salmon paired with dill for savory richness; thin cucumber slices with mint for a cool freshness; sliced radishes with dill for a peppery crunch; hard boiled eggs garnished with fresh chives offering a delicate savoriness; and a mix of blueberries, strawberries, and cherries lightly drizzled with honey for a sweet finish.
The textural contrast between the soft ricotta and the crisp bread, along with the variety of toppings, creates a versatile appetizer selection. Preparation can be done in advance by toasting the bread separately and allowing it to cool before spreading ricotta to avoid sogginess.
The recipe suggests substituting quail eggs with hen’s eggs if preferred and encourages choosing seasonal fruits and herbs to adapt flavors. Toasting the bread before assembly is recommended for added crunch and to maintain texture over time.
Ingredients
- 1 baguette toasting each piece is optional
- 15 oz ricotta cheese whole milk
- 2 radish sliced thin
- 6 quail eggs hard boiled, or hen's eggs
- 1 orange premiumed
- 5 oz smoked salmon
- 1 cucumber sliced thinly
- 1/2 cup blueberries halved
- 1/2 cup strawberries sliced
- 1/2 cup Cherry pitted and halved
- 1/4 cup honey
- 2 prigs mint leaves
- 2 prigs dill fresh
- 2 tbsp chive chopped, fresh
Instructions
- Cut the bread into half inch slices. I loved the way this tasted with a fresh baguette right out of the oven but you can toast the slices for a little extra crunch or even brush them with some olive oil and then bake on a sheet at 400F for a few minutes.
- Spread ricotta on each piece of bread.
- Add toppings. I paired salmon with dill, cucumbers with mint, radishes with dill, hard boiled eggs with chives, and give the fruit a drizzle of honey.
Notes
- Toast bread slices before assembling to add crunch and help prevent sogginess; let cooled bread cool before spreading ricotta.
- Quail eggs can be substituted with hen's eggs according to preference.
- Use seasonal fruits and herbs to vary toppings based on availability and taste.
