Easy Cannelloni Pasta Recipe

This dish is a delicious solution to Meatless Monday and it’s also vegetarian-friendly. It takes about an hour to get on the table and is quite easy to make!

Ingredients
- 12 cannelloni pasta dried
- 2 ½ cups marinara sauce divided
- 1 cup mozzarella cheese shredded
- filling
- 2 cups ricotta cheese
- 2 cups spinach chopped
- 2 egg
- ½ cup mozzarella cheese shredded
- ¼ cup Parmesan Cheese grated
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 350°F.
- Mix all of the filling ingredients together in a small bowl. Place into a piping bag or a large resealable bag and set aside.
- Add ⅓ cup water to the marinara sauce and place ½ cup of the sauce in the bottom of a 9x13 pan.
- Snip off the corner of the zipper bag if using and fill each cannelloni. Place the cannelloni in the pan and top with the remaining marinara sauce.
- Cover and bake for 40 minutes. Add cheese and bake covered for an additional 15-20 minutes until the cannelloni is tender.
