Easy Cheese Fries (With Homemade Fries)

This recipe offers homemade oven-baked potato wedges topped with a creamy cheddar cheese sauce. The fries are seasoned and baked to a tender, crisp finish, then coated with a smooth sauce made by whisking butter, flour, milk, and sharp cheddar cheese into a mildly spicy cheese topping. This dish combines crispy textures with a rich cheesy flavor and is suitable for serving as a side or casual snack.

Description

Easy Cheese Fries (With Homemade Fries) features potatoes peeled and cut into wedges, tossed with olive oil and seasoning, then oven-baked until fork-tender and crisp on the edges. The cheese sauce is made separately, beginning with a roux of melted butter and flour cooked briefly before slowly adding milk to thicken. Sharp cheddar cheese and a pinch of cayenne pepper are incorporated off the heat, creating a velvety sauce to drizzle over the fries. The balance of crispy baked potato and creamy cheese sauce delivers a comforting, casual dish.

The method involves baking the fries at a high temperature to achieve a crisp exterior while maintaining a soft interior. Flipping them halfway through ensures even cooking and browning. The cheese sauce complements the fries without overpowering, with the mild heat from cayenne adding a subtle depth. This recipe suits an afternoon snack, appetizer, or accompaniment to a relaxed meal.

Ingredients

Servings

Fries

  • 2 russet potato peeled and cut into 8 wedges each, medium to large
  • 2 tablespoons olive oil
  • seasoning salt or salt and pepper

Cheese Sauce

  • 1 tablespoon salted butter 14g
  • 1 tablespoon all-purpose flour 8g
  • ¾ cup milk any percentage
  • ¾ cup cheddar cheese preferably sharp and freshly shredded, shredded, quantity 3 oz
  • Pinch cayenne pepper
  • salt
  • black pepper

Instructions

Oven-baked Fries

  1. Preheat your oven to 475°F. Lightly grease a baking sheet with cooking spray and set aside.
  2. Toss potato wedges with oil and arrange wedges on the baking sheet in a single layer. Sprinkle with seasoning salt or salt and pepper.
  3. Bake for 15 minutes. Use a fork to flip the potatoes, sprinkle this side with seasoning salt/salt and pepper, and bake for an additional 10 to 20 minutes, until potatoes are fork-tender and reach your desired level of crispiness. Watch closely in the last few minutes of baking time, as the edges will go from browned to burned quite quickly.
  4. Remove from oven, and immediately start your cheese sauce.

Cheese Sauce

  1. In a small pot, over medium heat, melt butter. Whisk in flour and cook, whisking continuously, until flour is lightly golden, 30 seconds to 1 minute.
  2. Slowly pour in milk, whisking out any lumps as they form. Continue to whisk the mixture until it is thickened and bubbly, 3 to 4 minutes. Remove from heat.
  3. Add cheese by the heaping handful and whisk until smooth after each. Once all the cheese is incorporated, and add cayenne, salt, and pepper to taste.

Assemble

  1. Transfer potato wedges to plates or bowls and drizzle cheese sauce over the top. Serve immediately, and enjoy.
