Easy Cheesy Southwest Breakfast Casserole
Description
The casserole mixes frozen potatoes with peppers and onions integrated into the hash browns, softened by cottage cheese and eggs to bind the dish. Turkey sausage provides protein and a savory flavor, while shredded cheddar and pepper jack cheese add richness and a balance of mild heat. Chopped onions add texture and sharpness.
Baked at 375°F in a greased pan, the dish sets into a sliceable form with a golden cheese crust on top. Allowing it to rest before cutting helps the casserole firm up for clean serving portions. The casserole works well as a filling breakfast or brunch option that can be prepared ahead and baked fresh.
