  • 2 cups frozen O'Brien Style with peppers and onions Hash Brown Potatoes, thawed
  • 1 cup cottage cheese small curd
  • 8 ounces turkey breakfast sausage chopped into small pieces, fully cooked
  • 1 cup cheddar cheese divided, shredded sharp
  • ½ cup pepper jack cheese shredded
  • ½ cup onion finely chopped
  • 6 egg beaten, large
  • salt to taste
  • black pepper to taste
  • sour cream for garnish
  • green onion for garnish, sliced

Instructions

  1. Preheat oven to 375 degrees F. Spray an 8" x 8" baking dish with cooking spray and set aside.
  2. In large bowl, combine all ingredients. Pour mixture into prepared baking dish and spread evenly.
  3. Top the casserole with the reserved cheddar cheese.
  4. Bake in oven for 40-45 minutes or until set and golden brown on top.
  5. Allow to sit for 10-15 minutes before cutting in squares.
