  • 4 tbsp butter
  • 1 brown onion chopped
  • 1 cup mushroom sliced
  • ½ tsp thyme or 1/4 tsp fresh thyme leaves, dried
  • ½ tsp garlic powder
  • salt to taste
  • black pepper to taste, cracked
  • 1 ¼ cups mixed vegetables frozen
  • 2 tbsp flour
  • 1 ½ cups chicken broth low sodium
  • ½ cup sour cream
  • 1 ½ cups cheddar cheese grated
  • 2 cups chicken from approx 2 large chicken breasts, cooked shredded
  • 1 lb 4 oz tater tots frozen

Instructions

  1. Preheat to oven to 425F.
  2. Heat the butter over a medium high heat in a large frying pan or skillet. Once the butter is frothy add the onion and cook for 5 minutes until it is starting to soften and color.
  3. Add the mushrooms and continue to cook until the mushrooms are slightly golden. Season with the thyme, garlic powder, and some salt and pepper.
  4. Stir in the vegetables and the flour. Stir in the chicken broth and allow to bubble away until slightly thickened. This should take 2-3 minutes.
  5. Remove from the heat and stir in the sour cream and half the cheese. Season to taste with more salt and pepper before stirring in the shredded chicken.
  6. Transfer to a large baking dish and top with the tater tots. Scatter with the remaining cheese and bake for 30 minutes until golden and bubbling. Allow to rest for 10 minutes before serving.
