Easy Cheesy Tater Tot Casserole
Description
The Easy Cheesy Tater Tot Casserole blends sautéed onions and mushrooms seasoned with thyme and garlic powder with mixed vegetables in a thickened broth and sour cream sauce. Cooked shredded chicken enriches the mix before it's transferred to a baking dish. Topped with frozen tater tots and cheddar cheese, it's baked until golden and bubbly, creating a crispy, cheesy crust above a creamy, savory base.
The casserole balances textures with the crunchy tater tots and melted cheddar contrasting the creamy interior featuring tender chicken and vegetables. The use of simple seasonings like thyme and garlic powder enhances the flavor without overpowering the dish.
This casserole serves well as a family dinner or comforting meal sentiment. It’s flexible to variations, allowing substitution of chicken with ground meats or different vegetables based on availability or preference.
Notes in the recipe suggest you can substitute sour cream with plain Greek yogurt and personalize vegetable types. Cooking the substitute meats fully before incorporating them is recommended to maintain food safety and texture.
Ingredients
- 4 tbsp butter
- 1 brown onion chopped
- 1 cup mushroom sliced
- ½ tsp thyme or 1/4 tsp fresh thyme leaves, dried
- ½ tsp garlic powder
- salt to taste
- black pepper to taste, cracked
- 1 ¼ cups mixed vegetables frozen
- 2 tbsp flour
- 1 ½ cups chicken broth low sodium
- ½ cup sour cream
- 1 ½ cups cheddar cheese grated
- 2 cups chicken from approx 2 large chicken breasts, cooked shredded
- 1 lb 4 oz tater tots frozen
Instructions
- Preheat to oven to 425F.
- Heat the butter over a medium high heat in a large frying pan or skillet. Once the butter is frothy add the onion and cook for 5 minutes until it is starting to soften and color.
- Add the mushrooms and continue to cook until the mushrooms are slightly golden. Season with the thyme, garlic powder, and some salt and pepper.
- Stir in the vegetables and the flour. Stir in the chicken broth and allow to bubble away until slightly thickened. This should take 2-3 minutes.
- Remove from the heat and stir in the sour cream and half the cheese. Season to taste with more salt and pepper before stirring in the shredded chicken.
- Transfer to a large baking dish and top with the tater tots. Scatter with the remaining cheese and bake for 30 minutes until golden and bubbling. Allow to rest for 10 minutes before serving.
Notes
- You can replace the shredded chicken with ground turkey, beef, or shredded beef or pork if desired; ensure these proteins are fully cooked before adding.
- Feel free to modify the vegetables by adding fresh options like green beans, zucchini, bell peppers, or broccoli to suit your tastes.
- Plain Greek yogurt can be used instead of sour cream for a slightly different texture and flavor.
