Description

This Chicken Balti recipe starts by frying chopped onions until golden in vegetable oil on medium heat. Garlic puree, ginger paste, and a selection of whole spices including cinnamon stick, peppercorns, and cardamom pods are added along with dry spices like garam masala and chili powder. Tomatoes cook down to form a soft base, creating a thick, spicy sauce.

Chunks of chicken breast are added to coat with the sauce and cook through, releasing juices that further flavor the curry.   • 3 chicken breast
  • 2 onion large
  • 1 tablespoon Garlic puree
  • 1 tablespoon ginger paste
  • 3 tomato
  • 1 cinnamon stick
  • 1 tablespoon garam masala
  • 1 teaspoon chilli powder
  • 4 peppercorns
  • 3 cardamom pods
  • ¼ teaspoon salt
  • 2 tablespoon Greek yogurt
  • 2 teaspoon lime juice
  • Coriander or parsley, aka cilantro, fresh, to serve
  • 3 tablespoon vegetable oil

Instructions

  1. Heat up the oil in a pan set over a low to medium heat.
  2. Peel and chop the onions, and fry until soft and golden.
  3. Add the chopped tomatoes, garlic puree, ginger, garam masala, chilli powder, cinnamon stick, peppercorns and cardamom pods and stir well.
  4. Leave to cook for about 5 minutes or until the tomatoes are mushy.
  5. Cut the chicken breasts into chunks, then add them to the curry sauce.
  6. Stir well to coat, then leave to cook for about 15 minutes or until the liquid is released, and the chicken is cooked through.
  7. Add the yogurt and lime juice, and leave to cook for a further 2-3 mintues.
  8. Garnish with chopped coriander (cilantro).
