Easy Chicken Casserole
Description
The Easy Chicken Casserole uses bite-sized chicken breast pieces layered with instant white rice and a blend of condensed soups including chicken, mushroom, celery, and French onion, mixed with water to form a flavorful cooking base. The dish is assembled in a foil-lined baking pan, first the soup mixture, then rice, chicken, butter, and topped with the remaining soup mixture ensuring the rice is submerged to cook properly.
Covered tightly with aluminum foil, the casserole bakes at 350°F for about 1 hour and 15 minutes until the rice softens and chicken cooks through. After baking, stirring the casserole integrates the layers for a creamy texture. The foil lining reduces cleanup, retaining moisture and preventing sticking.
This casserole is practical for a comforting dinner and can be prepared with homemade or low sodium soups to control flavor and salt content. The recipe suggests using canned soups but also offers guidance for homemade alternatives to improve taste and healthfulness.
Ingredients
- 3 chicken breast cut into bite size pieces, boneless skinless
- 3 1/2 cups instant white rice I use Minute Rice
- 1 can cream of chicken soup condensed
- 1 can condensed cream of mushroom soup
- 1 can condensed cream of celery soup
- 1 can French Onion Soup condensed
- 1 can water use empty soup can to measure
- 1/4 cup butter melted
Instructions
- Preheat oven to 350 degrees. Line a 9x13 baking dish with aluminum foil and spray foil with non-stick cooking spray.
- In a bowl, whisk together all the soups and the water. Pour half of soup mixture in the bottom of the baking dish.
- Add rice evenly over the soup mixture.
- Evenly place the chicken pieces on top of the rice.
- Drizzle the melted butter over the chicken.
- Pour remaining soup mixture over chicken and rice. Be sure the rice is completely covered.
- Cover entire dish with aluminum foil, sealing it well around the edges of the pan. Bake for 1 hour and 15 minutes.
- Remove aluminum foil cover from the pan. Use a wooden spoon to stir the casserole before serving. Be careful not to tear the foil on the bottom of the pan.
Notes
- Line the baking dish with foil sprayed with non-stick spray for easy cleanup and to retain moisture during baking.
- Substitute canned soups with homemade versions for a fresher taste and reduced sodium.
- Use low sodium versions of canned soups if preferred to control salt levels.
