Easy Chicken Cordon Bleu Casserole
Description
This casserole recipe starts by preheating the oven to 350°F and coating a casserole dish with non-stick spray. Cream of mushroom soup is mixed with milk and poured into the dish, followed by placing chicken breasts arranged evenly. Each breast is seasoned with salt and pepper, topped with a slice of deli ham, and finally with a slice of Monterey Jack cheese. The dish is baked uncovered for 40 to 45 minutes until the chicken is cooked through.
The optional Dijon cream sauce is prepared separately by melting butter, whisking in flour to create a roux, then gradually adding milk, Dijon mustard, and Parmesan cheese. The sauce thickens after about 3 minutes and can be seasoned with salt and pepper. This sauce can be poured on the casserole before serving to add a creamy, tangy finish reminiscent of traditional chicken cordon bleu flavors.
The recipe notes suggest splitting chicken breasts horizontally and stuffing additional ham and cheese inside for fuller flavor pockets while keeping the easy prep style. This casserole makes a hearty main course that is straightforward to assemble and cook in one dish.
