Easy Chicken Divan
Description
Easy Chicken Divan features tender pieces of cooked chicken blended with broccoli florets in a creamy mixture that includes condensed soup, sour cream, and milk. The addition of garlic powder, onion powder, dry mustard, seasoned salt, and black pepper enhances the subtle flavors of the dish. A generous amount of cheddar cheese adds richness, while a topping of panko breadcrumbs mixed with melted butter provides a crisp, golden finish after baking.
The broccoli is boiled just until tender-crisp to avoid sogginess during baking. The casserole is assembled in a 9x13 dish, layered with sauce, chicken, broccoli, cheese, and the buttered breadcrumbs. Baking at 400°F for 18 to 20 minutes melds the flavors and crisps the topping, while keeping the interior creamy and hot.
This versatile casserole is well-suited for serving over cooked rice, egg noodles, or mashed potatoes, making it adaptable to different preferences or pantry items. It is a filling dish that combines protein, vegetables, and comfort in one bake.
Leftovers should be stored in an airtight container refrigerated for up to four days and reheated gently with a splash of milk to restore creaminess. Using fresh broccoli and draining it well before combining prevents watery results, while frozen broccoli can be a convenient alternative with slightly softer texture.
Ingredients
- 1 ½ pounds broccoli cut into bite size pieces, florets
- 3 cups chicken cooked, chopped
- 1 ½ cups cheddar cheese divided, shredded
- 10.5 ounces condensed cream of mushroom soup or condensed chicken soup, 1 can
- ⅔ cup sour cream
- ½ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dry mustard powder
- ½ teaspoon black pepper
- ¼ teaspoon seasoned salt
Topping
- 3 tablespoons panko bread crumbs or seasoned bread crumbs
- 1 tablespoon butter melted
Instructions
- Preheat the oven to 400°F.
- Bring a large pot of water to a boil. Add the broccoli and cook for 2-3 minutes or until tender-crisp. Drain well and set aside.
- In a medium bowl, combine 1 cup cheddar cheese, condensed soup, sour cream, milk, garlic powder, onion powder, dry mustard, pepper, and seasoned salt.
- Stir in drained broccoli and chicken. Transfer the mixture to a 9x13 casserole dish. Top with remaining cheese.
- In a small bowl, mix the butter and breadcrumbs. Sprinkle the topping over the chicken mixture.
- Bake for 18-20 minutes, or until the breadcrumbs are lightly browned and the mixture is bubbly and hot.
- Serve over rice, noodles, or mashed potatoes, as desired.
Notes
- Cook broccoli until just tender-crisp and drain thoroughly to keep the casserole sauce from becoming watery.
- Frozen broccoli can be used; follow package cooking instructions and drain well before assembling.
- Store leftovers refrigerated in an airtight container for up to 4 days and reheat with a small amount of milk to maintain creaminess.
