Easy Chicken Gnocchi Soup
Description
Beginning with a sauté of onion, celery, and carrot in olive oil and butter, this soup builds flavor through the addition of garlic and cremini mushrooms. Chicken broth blended with water and Italian seasoning forms the base to which cooked chicken and potato gnocchi are added. The soup simmers until the gnocchi is tender, then thickens and enriches with heavy cream and fresh spinach until wilted.
This preparation yields a soup that balances creamy richness with light vegetable freshness and tender bits of chicken and gnocchi, delivering both comforting warmth and texture variety. The flavor profile is mild and herbaceous due to Italian seasoning and fresh vegetables.
The soup can be seasoned with salt and pepper at the end to taste. Reheating thickens it further as the gnocchi releases starch, making it suitable for leftovers or make-ahead meals.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion chopped
- 2 ticks celery chopped
- 3 medium carrot sliced or chopped
- 2 cloves garlic minced
- 7 ounces cremini mushrooms sliced
- 4 cups chicken broth or stock
- 1 cup water
- 1/4 teaspoon Italian seasoning
- 2 cups chicken I used rotisserie, cooked
- 1 pound potato gnocchi
- 1 cup heavy cream aka whipping cream
- 2 cups baby spinach packed, fresh
- salt to taste
- black pepper to taste
Instructions
- Add the oil and butter to a large soup pot over medium-high heat.
- Add the onion, celery, and carrots to the pot. Sauté for 8-10 minutes with the lid slightly ajar. Stir once or twice during this time.
- Add the garlic and mushrooms to the pot and cook for a few minutes.
- Stir in the chicken broth, water, Italian seasoning, chicken, and gnocchi. Increase the heat to high and bring the soup to a boil.
- Reduce the heat to a gentle simmer and cook for 10 minutes.
- Stir in the cream and spinach. Cook for a few more minutes until the spinach is wilted and the soup is heated through. Season with salt & pepper as needed and serve.
Notes
- You may substitute milk or half-and-half for the cream to lighten the soup.
- Allowing the soup to sit or cooking longer thickens it as the gnocchi releases starch.
