  • 1 lb chicken breast shredded, boneless, skinless
  • 1 small apple chopped
  • ½ cup red seedless grapes cut in halves or thirds
  • 2 talks celery chopped
  • ¼ cup dried cranberries
  • ¾ cup yogurt plain, Greek
  • ¼ cup mayonnaise light
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1 teaspoon dill
  • 12 bibb lettuce or butter lettuce, leaves

Notes

  • **To prepare chicken: Bake chicken breasts at 350 degrees for 20-25 minutes. Using 2 forks shred, set aside to cool.
