Easy Chicken Sandwich Melts
Description
This recipe uses cans of well-drained chicken breast combined with mayonnaise and a seasoning blend called Johnny’s seasoning to flavor the filling. Diced tomato and fresh cilantro add freshness and moisture, while shredded cheddar cheese provides a creamy, savory layer that melts when baked. Optional sriracha adds heat and complexity but can be omitted or portioned for milder taste.
The mixture is spread generously on sliced bread and baked briefly at 350°F until warmed and cheese softens. The result is a sandwich with a creamy, cheesy topping and a slight crunch on the bread’s edges, good for a casual lunch or light dinner.
The homemade Johnny’s seasoning includes salt, paprika, black pepper, and garlic powder, which can be adjusted to taste. This seasoning blend helps elevate the mild canned chicken into a flavorful spread.
Ingredients
Ingredients for Sandwiches:
- 1 bread loaf good
- 2 cans 12.5 oz each chicken breast in water, well drained
- 3/4 cup mayonnaise or to taste, real
- Johnny’s seasoning to taste (see recipe for making your own seasoning below)
- 1 tomato diced, large
- 1/3 cilantro bunch
- 6 oz mild cheddar cheese finely shredded inside or a slice of cheese on top.

*You can make your own Johnny's seasoning easily:
- 1 ½ Tbsp salt sea salt
- 1 Tbsp paprika
- 1 tsp black pepper freshly ground
- 1 tsp garlic powder
Instructions
- Drain canned chicken well and transfer to a large mixing bowl, then break it up lightly with a fork.
- Stir in 3/4 cup mayo or to taste along with Johnny's seasoning to taste (I used a little more than 1/4 tsp seasoning).
- Add diced tomatoes, chopped cilantro and shredded cheddar cheese. Stir to combine.
- Add Sriracha hot sauce to taste. The Sriracha hot sauce gives it a nice kick and it's so good, but if you want it to be kid friendly, you can divide the mixture and only put it into half of the spread.
- Spread generously over good sliced bread (this one's from Costco) and bake uncovered on a cookie sheet at 350˚F for 8 minutes. Garnish with fresh cilantro and fresh tomatoes if desired.
Notes
- Add Johnny's seasoning gradually to taste rather than using the full batch to avoid over-seasoning.
- The optional sriracha can be split into portions for those who prefer less heat.
- Use good-quality bread for better texture when baked.
