  • 1 shallot peeled
  • 4 garlic cloves
  • 2 teaspoons ground coriander
  • 1 teaspoon cumin ground
  • ½ teaspoon Turmeric ground
  • 2 tablespoons palm sugar or brown sugar
  • 1 red chili pepper Fresno, or jalapeño pepper, seeded, finger variety
  • 1 ginger peeled, fresh
  • lime juice of 1
  • 2 tablespoons peanut oil
  • 2 tablespoons soy sauce
  • ¼ cup Sweet soy sauce kecap manis
  • 3 pounds dark chicken meat or white chicken meat; cut into ½ inch pieces
  • 1/2 recipe for peanut sauce

Instructions

  1. Add everything except for the chicken to a food processor or a blender and process or blend until smooth. Set aside.
  2. Prepare the chicken removing and skin or bones and cut into small ½” pieces and add to a large bowl.
  3. Add the marinade onto the chicken and optionally season with salt and pepper. Mix everything together completely. Cover and keep in the refrigerator for at least 4 hours or up to 24 hours.
  4. When you are ready to cook, preheat the grill to high heat (450° to 550°) and soak some wooden skewers in water for 20 minutes, so they do not catch on fire while grilling.
  5. Next, skewer the chicken leaving about 3” at the bottom of the skewer to make it easy to hold and eat. I got 12 8” skewers.
  6. Place the chicken on the grill and cook for 3-4 minutes per side or until browned and cooked throughout.
  7. Optionally garnish with chopped fresh cilantro and serve with peanut sauce.

Notes

  • These chicken satay skewers are best eaten immediately after grilling but can be kept warm in a low oven (200°F) for up to an hour.
  • Store cooked satay covered in the refrigerator for up to 4 days or freeze for up to 3 months; thaw in the fridge before reheating.
  • Reheat by covering and warming in an oven at 350°F for 6-8 minutes or microwave until hot.
  • If no grill is available, cook skewers in a grill pan or skillet with a little oil over medium-high heat, about 3-4 minutes per side.
  • Metal skewers can be used instead of wooden ones; soak wooden skewers in water for 20 minutes before grilling.
  • Watch carefully when grilling since the sugar in the marinade can burn quickly; lower heat if needed.
  • If you don’t have sweet soy sauce, use more sugar and regular soy sauce to maintain sweetness.
