Description
Cooked spaghetti noodles form the base for this chicken casserole, mixed with shredded rotisserie chicken, cream of chicken soup, salsa, sour cream, taco seasoning, and most of the Monterey Jack cheese. The blend is transferred to a baking dish and topped with remaining cheese and optional parsley before baking.

Ingredients
- 16 oz spaghetti noodles
- 2 cups rotisserie chicken cooked
- 2 cup Monterey jack cheese divided, shredded
- 1 cup sour cream
- 1 cup salsa
- 20 oz cream of chicken soup
- 1 teaspoon taco seasoning
- parsley optional, dried
Instructions
- Pre-heat oven to 350 degrees.
- Cook the spaghetti according to package directions.
- Mix together cooked pasta, chicken, soup, salsa, sour cream, taco seasoning and 1 1/2 cups cheese.
- Transfer the mixture to a 9x13 baking dish covered in non-stick baking spray.
- Top with 1/2 cup cheese and sprinkle with dried parsley (optional).
- Cover with foil and bake 25 to 30 minutes or until cheese is melted.
