  • 2 cans cream of chicken soup 10.5 oz cans
  • 1 1/2 cups sour cream
  • 1 can ROTEL
  • 1 can black beans rinsed and drained
  • 1 can corn drained, Mexi-corn variety
  • 3 tablespoon taco seasoning
  • 1 1/2 lbs chicken cooked and shredded or diced
  • 2 cups Mexican cheese shredded
  • 1 bag tortilla chips crushed
  • sour cream toppings of choice
  • avocado
  • salsa
  • tomato
  • black olives

Instructions

  1. Preheat oven to 375 degrees and grease a 9x13 baking dish.
  2. In a mixing bowl, combine the cream of chicken soups, sour cream, Rotel, black beans, corn, taco seasoning, and cooked chicken. Set aside.
  3. Crush tortilla chips in a Ziploc bag and spread half the crushed chip mixture onto the bottom of the greased pan.
  4. Spread half the chicken mixture on top of the crushed chips followed by 1 cup shredded cheese.
  5. Repeat layers one time ending with the remaining cheese on top.
  6. Place pan into preheated oven and bake for about 30 minutes, or until bubbly and cheese is golden brown.
  7. Remove from oven and serve with desired toppings.
