  • 4 cups sliced purple cabbage , finely shredded (or 4 cups coleslaw mix)
  • 1 carrot , julienned
  • 1 green onion , finely sliced
  • cup toasted peanuts , coarsely chopped
  • ½ bunch cilantro , minced (steam removed)

For the Dressing:

  • 1 tablespoon peanut oil or canola oil
  • 2 tablespoons Chinkiang vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 2 cloves garlic , minced
  • ¼ teaspoon kosher salt , to taste

Instructions

  1. In a small bowl, whisk together all the dressing ingredients. In a separate large bowl, combine the cabbage, carrot, green onion, peanuts, and cilantro.
  2. Pour in the dressing and toss with a pair of tongs to mix well. Taste and adjust seasoning if necessary.
