Description
This recipe starts by cooking pasta until al dente. Meanwhile, diced Spanish chorizo is fried in olive oil until just crisp, releasing its smoky, spicy flavors into the pan. Finely chopped onion and garlic are then softened in the same skillet, building a savory foundation.
Diced canned tomatoes and heavy cream are added next, simmered to reduce and thicken into a rich sauce. The combination of tomatoes’ acidity and chorizo’s fat creates a balanced taste, mellowed by the cream. Seasoning with salt and pepper adjusts the final flavor.
The pasta is tossed with the sauce just before serving, and freshly grated Parmesan cheese may be added for extra depth. This pasta works well as a stand-alone meal or paired with a simple salad.
The recipe allows using mild or spicy chorizo, and both partially or fully cured types work. Adjust spices to preference. The portion size and ingredient quantities make this a practical, satisfying dinner.
Ingredients
- 8 ounces pasta uncooked
- 1/2 tablespoon olive oil
- 1 (8.8 ounce) Spanish chorizo sausage cut into small pieces, coil
- 1/2 small onion chopped finely
- 3 cloves garlic minced
- 1 (14 ounce) can diced tomatoes with juices
- 1/2 cup heavy cream aka whipping cream
- salt to taste
- black pepper to taste
- Parmesan Cheese optional, freshly grated
Instructions
- Boil a large, salted pot of water for the pasta. Cook it until al dente according to package directions.
- Meanwhile, in a skillet over medium-high heat, add the olive oil and chorizo and fry it until it just starts to get crispy (around 5 minutes).
- Add the onion and cook it until it's softened (about 5 minutes).
- Stir in the garlic, tomatoes, and cream. Let the sauce cook for another 5 minutes or so, or until the sauce is reduced to your liking. Taste and season with salt & pepper as needed.
- Toss with the pasta and serve with freshly grated parmesan cheese if desired.
Notes
- Choose mild or spicy Spanish chorizo based on your taste preference.
- Either partially or fully cured chorizo can be used with good results.
- This recipe uses Spanish chorizo specifically, not Mexican chorizo.
- Around 8.8 ounces (about 250g) of chorizo fits the recipe well.
