Ingredients

Servings

for the garlic lime shrimp

  • 1 lb Shrimp peel and deveined
  • 2 tbsp olive oil divided
  • 2 tbsp lime juice fresh
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • salt to taste
  • black pepper to taste
  • 3-4 garlic minced, cloves
  • 1 red bell pepper finely diced

for coconut rice

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 2 tbsp cilantro finely chopped, fresh leaves
  • 2 tsp lime juice fresh

for coconut lime dressing

  • ¼ cup coconut milk
  • 2 tbsp lime juice fresh
  • 1 tbsp honey
  • 2 tbsp cilantro finely chopped, fresh leaves
  • salt to taste
  • black pepper to taste

for the bowls - pick your preferred toppings

  • 2 cups arugula
  • ½ cup carrot shredded
  • ½ cup cherry tomato halved
  • ½ cup cucumber cut into rounds
  • 1 cup black beans cooked

Instructions

  1. Prepare the shrimp: In a medium sized bowl, combine the shrimp with 1 tablespoon olive oil, lime juice, smoked paprika, garlic powder, salt and pepper to taste.
  2. Cook the shrimp: In a skillet heat 1 tablespoon olive oil over medium-high heat. Add the minced garlic and sauté for 1-2 seconds; add in diced red pepper and sauté 2-3 minutes, until softened. Add the marinated shrimp to the skillet and cook for about 2-3 minutes per side until they turn pink and opaque. Set skillet aside.
  3. Cook the coconut rice: In a saucepan, combine the jasmine rice, coconut milk, water, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and fluffy. Stir in the freshly chopped cilantro leaves and lime juice.
  4. Prepare the coconut lime dressing: Into a blender mix the coconut milk, lime juice, honey, chopped cilantro; season with salt and pepper to taste and set aside.
  5. Assemble the bowls: Divide the coconut rice and shrimp mixture into 4 bowls. Top each bowl with your choice of toppings. Drizzle over the coconut lime dressing and serve with fresh lime wedges if desired. Enjoy!
