Easy Cinnamon Drop Biscuits
Description
Easy Cinnamon Drop Biscuits combine flour, brown sugar, baking powder, cinnamon, and salt with chilled butter cut into small cubes, then blended with cold buttermilk and vanilla extract. This creates a soft yet flaky biscuit dough that bakes up with a subtle cinnamon sweetness. Baking at a high temperature helps develop golden edges while keeping the interior tender.
The biscuits are portioned with a three-tablespoon scoop and baked until golden, then brushed with melted butter to enhance richness and moisture. The warm biscuits offer a lightly spiced flavor and soft crumb that pairs well with tea or coffee.
For ease, the dough can be prepared and refrigerated up to a day ahead. Freshly baked biscuits are best enjoyed within a couple of hours for optimal texture.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/3 cup light brown sugar packed
- 5 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup unsalted butter divided
- 3/4 cup buttermilk cold, whole
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- Cut 1 stick (1/2 cup) butter into cubes. Place back in the refrigerator to chill. Melt the remaining 1/4 cup butter in the microwave or on the stovetop. Allow it to cool to just above room temperature.
- Place the flour, brown sugar, baking powder, cinnamon, and salt in a food processor. Pulse to combine. Then add the cold butter cubes, and pulse until the cubes are cut down to pea-size pieces.
- Add the buttermilk and vanilla extract. Pulse until the mixture comes together into a smooth ball.
- While the dough is still cold, use a 3-tablespoon scoop to measure out 14 biscuits. Arrange them on the baking sheet with room to spread a little.
- Quickly brush the melted butter over the tops and place in the oven. Bake for 10-12 minutes, until golden around the edges.
- Sprinkle the tops with extra cinnamon, if desired. Serve warm, or within 2 hours.
Notes
- You can prepare the biscuit dough up to a day in advance and keep it refrigerated until ready to bake.
- Use cold butter cut into cubes and cold buttermilk to ensure flaky biscuits with tender crumb.
- Serve warm shortly after baking to enjoy the best texture; biscuits can be brushed with extra melted butter for richness.
