Easy Clambake

This Easy Clambake brings together shrimp, clams, mussels, small red potatoes, and sweet corn simmered in a cast-iron skillet with melted butter, garlic, Cajun seasoning, and beer or white wine. The shellfish cook until tender and infused with the seasoned broth, while the vegetables are tender and flavorful. The dish is served with lemon wedges and melted butter for dipping.

Description

The recipe combines a selection of seafood and vegetables characteristic of a traditional clambake but simplifies the process by using a cast-iron skillet. Starting with par-boiled potatoes and corn ensures they are cooked through before joining the mix, where the seasoned melted butter and liquid from beer or wine help steam and flavor the shellfish. The garlic and Cajun seasoning provide a pungent, mildly spicy background, while black pepper adds freshness. The shrimp, clams, and mussels develop a tender, juicy texture as they cook covered. Served immediately, the melted butter allows for dipping, enhancing the seafood’s richness, and lemon wedges cut through with acidity.
