Easy Classic Nachos Recipe

This recipe layers tortilla chips with a spicy beef and bean mixture, then tops them with a blend of melting cheeses and pickled jalapeños, baked until gooey and warm. It's a hearty, richly flavored dish with layers of textures from crispy chips to melted cheese and tender meat.

Description

Easy Classic Nachos assembles seasoned ground beef cooked with taco spices alongside refried beans to form a flavorful base over crisp tortilla chips. The mix is topped with shredded cheeses, which melt into a creamy, gooey topping during baking. Pickled jalapeños add a sharp, tangy heat that contrasts with the richness of the cheese and meat.

Baking at 350°F melts the cheese and heats the toppings thoroughly, resulting in a dish that balances spicy, salty, and creamy elements. The dish invites customization, with additional toppings like diced tomatoes, cilantro, or hot sauce added after baking to suit personal taste.

This recipe works well as a shareable snack or casual meal and is best eaten fresh from the oven to enjoy the melting textures and warm layers. It’s flexible with toppings, allowing for additions like guacamole, sour cream, or fresh vegetables to vary flavor and texture.

Ingredients

Servings
  • 1 teaspoon olive oil
  • 1 pound ground beef
  • 3 tablespoons taco seasoning
  • salt to taste
  • black pepper to taste
  • 15 ounces refried beans 1 can
  • ½ cup water
  • 13 ounces tortilla chips 1 typical bag, thick
  • 3-4 cups cheese I love a mix of Colby Jack and Cheddar - use your favorite melty cheeses, shredded
  • ½ cup jalapeños pickled

FOR SERVING/TOPPING

  • tomatoes See the RECIPE NOTES for more ideas, diced tomatoes, pickled jalapenos, fresh chopped cilantro, extra, spicy
  • jalapeños
  • cilantro
  • hot sauce
  • red pepper flakes

Instructions

  1. Heat the olive oil in a pan to medium heat. Add the ground beef and cook for 5 minutes until nicely browned and mostly cooked through, breaking it apart with a wooden spoon. Drain excess fat and liquid.
  2. Add the taco seasonings, salt and pepper to taste, and stir. Cook 2-3 minutes to let the spices bloom.
  3. Stir in the refried beans and water. Mix to incorporate, then reduce the heat. Simmer for 10 minutes to develop flavor. You can simmer longer if you’d like to develop flavor further.
  4. Preheat oven to 350 degrees F.
  5. Layer the tortilla chips onto a large baking sheet.
  6. Spread the cooked meat and beans mixture evenly over the tortilla chips.
  7. Top evenly with the shredded cheeses.
  8. Top with pickled jalapeno peppers. Add as few or as many as you’d like.
  9. Bake the nachos tray for 10 minutes, or until the cheeses are nicely melted and gooey.
  10. Remove from heat, top with your favorite toppings, and serve!

Notes

  • Customize toppings with diced avocado, guacamole, pico de gallo, or sour cream as preferred.
  • Fresh jalapeño slices or pickled red onions can add extra heat or tang.
  • Serve nachos immediately after baking to preserve the melted cheese texture.
