Instructions

  1. Preheat oven to 325F with rack on lower middle position. Lightly grease a 9x13 baking dish and set aside.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and olive oil until fully combined and not lumpy.
  3. Add all remaining ingredients, except Panko breadcrumbs and parsley, to the bowl and gently stir together until fully incorporated.
  4. Pour mixture evenly into prepared baking dish. Top with evenly Panko breadcrumbs and parsley.
  5. Bake 50-55 min or until mostly set. Center will not be completely firm, but will set upon cooling.
  6. Let casserole sit at room temp for 30-60 minutes to give it time to firm up; serve either at room temp or reheat in oven until fully warmed through. * You can give it an extra broil for 5 minutes for topping to re-crisp.

Notes

  • When combining the flour, cornmeal, sugar, baking soda, salt, and olive oil, ensure to whisk them thoroughly until they are fully combined and free of lumps. This will ensure a smooth texture in your corn casserole.
  • When adding the remaining ingredients to the bowl, stir gently to avoid over-mixing. Over-mixing can result in a dense casserole, while we're aiming for a light, soufflé-like texture.
  • Pour the mixture evenly into your prepared baking dish to ensure the casserole cooks evenly. Uneven distribution can lead to some parts being undercooked or overcooked.
  • Don't skip the Panko breadcrumbs and parsley topping. They add a delicious crunch and fresh flavor that perfectly complements the creamy, savory, and sweet corn casserole.
  • Be patient and let the casserole sit at room temperature for 30-60 minutes after baking. This allows it to firm up and enhances the flavors.
  • If you want to reheat the casserole, consider giving it an extra broil for 5 minutes. This will re-crisp the topping and make it taste as good as fresh.
  • Don't be afraid to experiment with this recipe. You can add other ingredients like cheese or green onions to customize it to your taste.
  • Remember, this Easy Corn Casserole Recipe can be made ahead of time. It's a great option if you're planning a holiday meal and want to reduce stress on the day, and leaves you plenty of time to make other holiday favorites like Sweet Potato Casserole and Mashed Potatoes.
