Easy Corn Casserole
Description
The Easy Corn Casserole begins by mixing two types of canned corn—creamed and whole kernel—with eggs and cornbread mix to create the base. Sugar is added for a touch of sweetness, and the mixture is moistened with milk and melted butter to ensure a tender, rich texture once baked.
The batter is poured into a buttered baking dish and baked at 400°F until set and golden brown on top. Partway through baking, the casserole is loosely covered with foil to prevent over-browning while allowing the center to cook through. Cooling briefly after baking helps the casserole firm up, making it easier to serve.
This dish offers a comforting, sweet-savory side that pairs well with a variety of main courses, especially in Southern or comfort food meals. Its hearty corn flavor and moist crumb make it a popular choice accompanying meats or vegetables.
