  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder

Wet Ingredients

  • 1 (14.75 ounce can) creamed corn
  • 1 (15 ounce can) corn drained, whole kernel
  • 3/4 cup sour cream
  • 8 tablespoons butter melted, salted
  • 2 large egg lightly beaten
  • 2 tablespoons jalapeño about 1 jalapeno, minced
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Pre-heat the oven to 325F. Grease a 9x9 baking dish.
  2. Mix flour, corn meal, sugar and baking powder together.
  3. Stir in the drained can of corn, can of creamed corn, sour cream, melted butter, eggs and the finely chopped jalapenos. Give it just a pinch of salt and pepper.
  4. Mix all the ingredients in a bowl till well combined.
  5. Pour the batter into the casserole dish and bake for 50-55 minutes or until the center is set and does not jiggle.
  6. Serve warm.

Notes

  • If using a boxed cornbread mix, omit the flour, cornmeal, sugar, and baking powder and replace them with an 8.5-ounce box as directed.
