- 1/2 cup all-purpose flour
- 1/2 cup cornmeal

Wet Ingredients
- 1 (14.75 ounce can) creamed corn
- 1 (15 ounce can) corn drained, whole kernel
- 3/4 cup sour cream
- 8 tablespoons butter melted, salted
- 2 large egg lightly beaten
- 2 tablespoons jalapeño about 1 jalapeno, minced
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Pre-heat the oven to 325F. Grease a 9x9 baking dish.
- Mix flour, corn meal, sugar and baking powder together.
- Stir in the drained can of corn, can of creamed corn, sour cream, melted butter, eggs and the finely chopped jalapenos. Give it just a pinch of salt and pepper.
- Mix all the ingredients in a bowl till well combined.
- Pour the batter into the casserole dish and bake for 50-55 minutes or until the center is set and does not jiggle.
- Serve warm.
Notes
- If using a boxed cornbread mix, omit the flour, cornmeal, sugar, and baking powder and replace them with an 8.5-ounce box as directed.
