Easy Corn Casserole
Description
The Easy Corn Casserole recipe combines dry ingredients—flour, cornmeal, sugar, baking powder, salt—with olive oil before folding in creamed and whole corn, eggs, melted butter, and sour cream. This mixture produces a tender, mostly set custard with visible corn kernels throughout. Panko breadcrumbs sprinkled on top add a crispy texture once baked and optionally broiled for extra crunch.
Once baked at 325°F for 50-55 minutes, the casserole is soft in the center and firms upon cooling for 30-60 minutes at room temperature, making it convenient for preparation ahead of time. This dish complements a variety of meals, particularly holiday spreads.
Gently mixing prevents a dense texture, and even spreading in the baking dish ensures uniform cooking. The recipe invites variations such as adding cheese or green onions. Reheating can be done carefully with a brief broil to restore topping crispness.
Ingredients
- ⅔ cup all-purpose flour
- ½ cup cornmeal coarse, yellow
- 3 TB sugar
- 1 TB baking powder
- ¼ tsp table salt
- 2 TB olive oil
- 14.6 oz creamed corn canned, with juices
- 14.5 oz sweet corn canned, with juices, kernels
- 2 egg lightly beaten, large
- 4 TB butter melted, salted
- 1 cup sour cream whole
- ⅛ tsp cayenne pepper
- ⅔ cup panko breadcrumbs for topping
- 1 TB parsley optional, for topping, freshly chopped
Instructions
- Preheat oven to 325F with rack on lower middle position. Lightly grease a 9x13 baking dish and set aside.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and olive oil until fully combined and not lumpy.
- Add all remaining ingredients, except Panko breadcrumbs and parsley, to the bowl and gently stir together until fully incorporated.
- Pour mixture evenly into prepared baking dish. Top with evenly Panko breadcrumbs and parsley.
- Bake 50-55 min or until mostly set. Center will not be completely firm, but will set upon cooling.
- Let casserole sit at room temp for 30-60 minutes to give it time to firm up; serve either at room temp or reheat in oven until fully warmed through. * You can give it an extra broil for 5 minutes for topping to re-crisp.
Notes
- Whisk dry ingredients thoroughly before adding wet ingredients to prevent lumps and ensure even texture.
- Stir the batter gently when mixing in wet ingredients to avoid over-mixing which can make the casserole dense.
- Distribute the batter evenly in the baking dish to promote uniform baking and doneness.
- Panko breadcrumb and parsley topping adds a desirable crunch and fresh flavor contrast to the creamy casserole.
- Allow the casserole to cool at room temperature for 30-60 minutes after baking to let it fully set before serving or reheating.
- Reheat gently with an additional 5-minute broil to refresh and crisp the topping if serving warm later.
- Feel free to customize by adding ingredients like cheese or green onions according to taste preferences.
- This casserole can be made ahead to ease holiday meal preparations.
