Easy Corn Fritters Recipe

Easy Corn Fritters mix fresh corn kernels into a thick batter made with flour, corn starch, sugar, baking powder, eggs, and milk, then pan-fried until golden and crisp on each side. These fritters have a lightly sweet corn flavor and a tender interior, perfect for serving with savory or sweet toppings like sour cream, green onions, or maple syrup.

Description

The Easy Corn Fritters recipe uses a blend of all-purpose flour, corn starch, sugar, baking powder, salt, milk, and eggs to create a batter that is thick and slightly lumpy after folding in fresh corn kernels. The batter is spooned into hot oil and pressed slightly to form round, flat fritters. They fry for approximately two minutes per side until a golden brown crust forms and the fritters are cooked through.

This preparation yields crispy exterior fritters with a moist, tender interior and a hint of sweet corn throughout. Optional garnishes include sour cream or sliced green onions for a savory note or maple syrup for a sweeter contrast. The batter's thickness helps keep the fritters from spreading too thin and maintains a satisfying texture.

They can be made shortly ahead and kept warm, stored in the refrigerator for several days, or frozen for longer storage. Reheating is best done in an oven to restore crispness. Variations such as adding jalapeños or onions can increase flavor complexity, and frying in a pot of oil preserves a more rounded shape.

Notes

  • Prepare fritters up to 30 minutes ahead and keep warm on a rack in a low oven (200°F) until serving.
  • Store leftovers covered in the refrigerator for up to 4 days or freeze for up to 3 months, thawing in the refrigerator before reheating.
  • Reheat baked fritters in the oven at 350°F for 4-6 minutes to restore crispness.
  • Batter should be thick, similar to thick pancake batter, before adding corn.
  • Enhance flavor by adding jalapeños, onions, or garlic to the batter if desired.
  • For a sweeter finishing touch, drizzle with honey or molasses.
  • Frying fritters in a pot of oil can help maintain a rounder shape like apple fritters.
