Easy Corn Salsa

This Easy Corn Salsa blends yellow sweet corn with diced red onion, jalapeno, chopped cilantro, sea salt, lime juice, and lemon juice. The result is a fresh, tangy, and mildly spicy salsa perfect as a snack with chips or as a flavorful side dish. Using fresh, thawed frozen, or grilled corn adds versatility to the preparation.

Description

The Easy Corn Salsa combines corn — which can be fresh, frozen and thawed, or grilled for extra flavor — with crisp red onion and diced jalapeno for a balance of sweetness and heat. Chopped cilantro contributes herbal brightness while lime and lemon juices add citrusy acidity that ties the ingredients together.

Salt enhances the overall flavors, allowing them to blend and complement each other. This salsa has a light, crisp texture and can be served chilled alongside chips, as an appetizer, or with dinner as a side dish.

The recipe requires no cooking beyond optional grilling and is quick to prepare by mixing all ingredients. The salsa keeps well in an airtight container refrigerated for up to five days, making it suitable for making ahead.

Defrosting frozen corn quickly under cold water and draining well prevents excess moisture. Using fresh or grilled corn can add a sweeter or smoky flavor dimension.

Ingredients

Servings
  • 1 oz bag corn or 2 1/2 cups fresh corn, yellow, sweet, frozen, thawed
  • ½ cup red onion diced
  • 1 jalapeno pepper deseeded and diced
  • ½ cup cilantro chopped
  • ½ teaspoon salt sea salt
  • 1 Tablespoon lime juice fresh
  • 1 Tablespoon lemon juice fresh

Instructions

  1. Combine all ingredients in a bowl and toss. Taste and season with additional salt, if needed.
  2. Serve salsa as a snack with chips, appetizer or a side for dinner.
  3. Store salsa in an air-tight container for up to 5 days in the fridge.

Notes

  • To thaw frozen corn quickly, run it under cold water and drain thoroughly before use.
  • Fresh sweet corn can be used as an alternative, about 2.5 cups, preferably removed from the cob.
  • Grilling corn before removing from the cob adds a smoky flavor to the salsa.
  • Store salsa in an airtight container in the refrigerator for up to 5 days.
