Easy Corn Salsa Recipe

This easy Corn Salsa is bursting with fresh flavors! It's simple to make with simple ingredients and wonderful to dip with tortilla chips or as a topping on any of your favorite Mexican dishes!

Ingredients

  • 1 tablespoon olive oil
  • 2 cups sweet corn
  • 4 cloves garlic minced
  • 1 medium tomato seeded and diced
  • ¼ medium red onion finely chopped
  • 2 tablespoons lime juice
  • 1 avocado diced
  • cup cilantro chopped, fresh
  • ½ jalapeño finely chopped optional
  • tortilla chips for dipping

Instructions

  1. In a pan, saute the corn and garlic in olive oil on med-high for about 5-10 minutes.  Set aside and cool to room temperature.
  2. In a medium bowl, combine all the remaining ingredients and mix well.
  3. Add the cooked corn and garlic (once cooled) and mix thoroughly again.
  4. Serve with tortilla chips.

Notes

  • If using whole tomatoes, I like to remove the seeds to the salsa is less watery.
  • Thaw frozen corn and drain any excess liquid before sautéing.
  • You can grill the corn instead of sautéing if you'd like. It's really good!
  • Bell Peppers: Add diced bell peppers for an extra crunch and a pop of color.
  • Black Beans: Add black beans for added protein and fiber.
  • Cheese: Sprinkle in some cotija or feta cheese.
  • Mango: For a sweeter version, add diced mango.
  • Cucumber: seeded diced cucumber gives a refreshing crunch
  • Spicy kick: add diced jalapeño pepper or a dash of chili powder.
