Easy Cornbread Taco Bake
Description
The Easy Cornbread Taco Bake combines spiced ground beef cooked with taco seasoning and chili without beans, mixed with mexicorn and half of the shredded cheddar cheese. This filling simmers to meld flavors while the cornbread batter is prepared separately with evaporated mexicorn and the remaining cheddar cheese folded in. The taco meat mixture is spread in a baking dish and topped with the cheesy cornbread batter, then baked at 375°F until golden and set. The contrast of savory meat with the soft, cheesy cornbread topping creates a satisfying texture and flavor balance.
The warmth and slight sweetness of the cornbread complements the spiced beef and chili, while the addition of toppings like sour cream, salsa, avocado, tomato, and olives can personalize each serving. This dish serves well as a filling weeknight meal and can be cut into portions for easy serving.
For best results, make sure to drain excess fat from the cooked meat before adding taco seasoning. The cornbread topping spreads evenly over the meat base to create a layered bake that holds together well after baking. Leftovers can be reheated for a quick lunch or dinner.
