Description

The Easy Cornbread Taco Bake combines spiced ground beef cooked with taco seasoning and chili without beans, mixed with mexicorn and half of the shredded cheddar cheese. This filling simmers to meld flavors while the cornbread batter is prepared separately with evaporated mexicorn and the remaining cheddar cheese folded in. The taco meat mixture is spread in a baking dish and topped with the cheesy cornbread batter, then baked at 375°F until golden and set. Ingredients

  • 1 lb ground beef *or turkey
  • 4 tablespoon taco seasoning *or 1 envelope
  • 1 can chili without beans
  • 11 oz mexicorn *drained
  • 2 cups cheddar cheese *shredded and divided
  • 2 boxes cornbread mix 8.5 oz boxes, Jiffy brand
  • sour cream toppings of choice
  • salsa
  • tomato
  • avocado
  • olives

Instructions

  1. In a large skillet, cook meat until no longer pink. Drain fat.
  2. Add in taco seasoning and cook according to directions (add water and allow to simmer).
  3. Stir in can chili w/o beans and 1 cup cheese.
  4. Allow to simmer on low.
  5. In a large bowl, combine the 2 packages cornbread and mix according to directions.
  6. Add in Mexicorn and remaining 1 cup cheese to the cornbread. Mix well.
  7. Remove meat from heat and pour mixture onto a cookie sheet.
  8. Top with cornbread batter and spread evenly.
  9. Bake in a preheated oven, 375, for about 20 minutes.
  10. Remove from oven and cut into desired size pieces. Top with preferred toppings!!
