Easy Creamed Spinach combines thawed, well-drained frozen spinach with a rich sauce made from heavy cream, mascarpone, cream cheese, Asiago cheese, and sautéed garlic. The garlic is lightly cooked in butter to release its aroma without burning, then blended with the cheeses and cream until melted and smooth. After stirring in the spinach, the mixture simmers uncovered to thicken to the desired consistency. Ingredients

  • 2 - 9 ounce spinach thawed and drained, chopped, frozen, packages
  • 1 cup heavy cream
  • cup mascarpone cheese room temperature
  • cup cream cheese  room temperature
  • cup Asiago cheese or parmesan cheese, grated
  • 2 cloves garlic minced
  • 1 tablespoon butter
  • salt to taste
  • black pepper to taste

Instructions

  1. Defrost the spinach and squeeze every bit of water out that you can, making sure it is as dry as possible.  Heat a skillet over medium and sauté the garlic in the butter for about 20 seconds, careful not to burn it.
  2. Add in the heavy cream, mascarpone, cream cheese, salt and pepper and mix until the cheese has melted.  Then add in the grated asiago.  Add in the spinach and simmer (uncovered) on low for 5 minutes, or until thickened to your liking.
  3. Allow to cool slightly before serving with a grating of asiago cheese over the top.  Store leftovers in the fridge for a few days or freeze.

Notes

  • Ensure the spinach is thoroughly drained to avoid a watery creamed spinach.
  • For a tangier, thinner version, add up to ½ cup extra heavy cream and adjust the salt accordingly.
  • Asiago cheese adds a distinctive flavor but parmesan or Romano can be used as substitutes.
