Description

These ingredients provide a blend of crisp, fresh textures and sweet, juicy fruit contrasts.

The dressing is made from mayonnaise and sweetened condensed milk, flavored with curry powder, turmeric, optional cayenne pepper for heat, and lemon juice to balance the sweetness with acidity. Salt and black pepper adjust seasoning. Most of the dressing is mixed into the salad initially, with the remainder added just before serving to keep the salad creamy and fresh.

  • 500 macaroni cooked, g/1lb
  • 2 bell pepper chopped, red
  • 1 cucumber peeled and seeded, chopped
  • 1 red onion finely chopped
  • 3 celery finely chopped, sticks
  • 1 peaches drained and chopped, 400g/14oz can

for the dressing

  • cups mayonnaise
  • 4 tablespoons sweetened condensed milk
  • 1-2 teaspoons curry powder to taste
  • ½ teaspoon Turmeric ground
  • pinch cayenne pepper optional
  • 1-2 tablespoons lemon juice to taste
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine the cooked macaroni with the remaining salad ingredients.
  2. Stir together all the dressing ingredients.
  3. Pour ¾ of the dressing over the salad and mix well. Reserve the rest of the dressing.
  4. Place the macaroni salad in the fridge and allow to chill for an hour (alternatively, you can make this the day before. Cover with plastic wrap and chill.)
  5. Just before serving, pour over the remaining dressing and mix well.
  6. Serve.
