Ingredients
- 4 salmon fillets
- 1 lb baby potato halved
- 1 lb green beans trimmed
- ½ cup yogurt or sour cream, plain, Greek
- 2 tbsp dill finely chopped, fresh
- 4-5 garlic minced, cloves
- 1 lemon juice and rounds for garnish
- salt to taste
- black pepper to taste
- olive oil to drizzle over veggies
Instructions
- Precook the potatoes: In a large pot of boiling water, cook potatoes for 15 minutes. Drain and set aside.
- Preheat your oven to 400 degrees F.
- While the potatoes are boiling, make the creamy dill sauce; Into a bowl, mix together the greek yogurt, fresh dill, minced garlic, lemon juice, olive oil, salt, and pepper.
- Into a large baking dish or sheet pan, place down the pre-cooked baby potatoes and green beans. Drizzle over with olive oil. Mix in a 1/4 cup of the creamy dill sauce to coat.
- Place the salmon fillets in the middle and season with salt and pepper to taste. Spread the remaining sauce onto each fillet. Add a lemon round to the top, if desired.
- Bake in the preheated oven for 20-25 minutes, or until the same is cooked through and green beans are tender. Enjoy!
